Tempered acidity and dark spicy oak extend the palate. The finish is nutty and toasty.\u003c\/p\u003e\n\u003cp\u003eThe base beer is brewed entirely with certified organic cereals from\u003cspan\u003e \u003c\/span\u003e\u003cspan\u003eChris and Sam Greenwood's farm in \u003c\/span\u003e\u003cspan\u003eColeambally NSW. Organic raw Red wheat with Organic Schooner barley malted to Munich, Vienna and chocolate roasts by \u003c\/span\u003e\u003ca href=\"http:\/\/www.voyagercraftmalt.com.au\/\" target=\"_blank\" rel=\"noreferrer noopener\"\u003eVoyager Craft Malt\u003c\/a\u003e. \u003cspan\u003eIt is made with filtered Sydney water, Organic Motueka (NZ) and Saaz (CZ) hops. Finally, it was fermented with our house culture: brewers yeast, foraged wild yeast and naturally occurring souring bacteria native to New South Wales. \u003c\/span\u003eIt was bottled on 19 January 2022 and naturally conditioned through refermentation for 10 weeks.
