The 25–45-year-old vines are organically farmed over granitic sandy gravel and ferricrete, with the fruit hand-picked, destemmed and left on skins for eight days of wild fermentation. From there, it’s pressed into a mix of stainless steel, concrete and old oak for natural settling and a short élevage before bottling.\u003c\/p\u003e\n\u003cp\u003eOrange, lemon and grapefruit lead the charge, with barley sugar and iced tea adding a slightly more savoury, intriguing edge. Round and generous through the palate, with firm structure and mouth-coating tannins bringing plenty of grip and shape.
