These days Tim makes small wines from great sites around Central Victoria. He sources handpicked grapes from small growers; some organic, some moving that way and some more conventionally grown. Both parcels offer very high natural acid and were handled oxidatively during ferment, resting over winter in seasoned barrels, topped regularly and racked and blended in early Spring by gravity, with some sulphur added prior to bottling.\u003c\/p\u003e\n\u003cp\u003eAmber jumps from the glass with stone fruit aromatics, white peaches and lemon curd, orange peel with subtle spice and grapefruit like acidity.
