The lots of made up of the 3 main grape varities: • Pinot Noir - 45% • Chardonnay - 30% • Meunier - 25%. They extends over 10 hectares and have more than 60 plots with an average age of 30 years. The vineyards are farmed sustainably planting cover crops and overturning the soils. They aim is to treat only with organic products, but may spray if needed, depending on the vintage conditions. Everything begins with respect for the terroir and evolving with the vines. In the winery, all wild ferments and the use a traditional Champagne press. Part of their ferments are carried out in demi-muids (600 L barrels) and part in stainless and enamelled steel tanks. The different vessels allow them to find the balance between freshness and openness. No malo is carried out in the base wine but they can trigger naturally on the reserve wines.
